Ingredients

Boneless, skinless chicken thighs (2 lbs)

Bell peppers, assorted colors (3 medium)

Red onion (1 medium)

Cherry tomatoes (1 pint)

Olive oil (1/4 cup)

Lemon juice (2 tbsp)

Garlic, minced (3 cloves)

Dried oregano (1 tsp)

Salt and pepper (to taste)


Instructions

  • Marinate the Chicken:
    In a large bowl, whisk together olive oil, lemon juice, garlic, paprika, cumin, oregano, salt, and pepper. Add the chicken cubes and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours for extra flavor. 🍗⏳
  • Prepare the Vegetables:
    Thread the marinated chicken cubes onto the soaked skewers, alternating with chunks of red and green bell peppers and red onion wedges. 🍢🍃
  • Grill the Kebabs:
